Could you elaborate? All the edges I've created that easily shaved had no detectable burr.

Yes that is true.The steel also should be fine grained as well.You want a very smooth razor edge.You should stay away from toothy edges when it comes to shaving.Cmp s30v may work as well or even 440c.

For a straight razor, a wire edge is drawn out and into a "fin". This fin is maintained with a strop
