Russ, how do you sharpen your other knives? The last few Case knives that I bought had too steep of an edge grind to match the Sharpmaker, so I had to reprofile those. I used a rubber band to hold DMT stones up against the Sharpmaker rods.
Whatever you do on your other knives will work on INFI. It is not one of the modern super steels that is difficult to grind. So taking off the thick shoulder can be accomplished by the average guy with simple tools; be it stones, or sandpaper on a firm strop, even skateboard grit tape.
