Another knife to consider (if you can still find one) is the Spyderco Maddox. Its discontinued however, if I understand correctly, Joe Maddox is in discussions with different company to produce another run.

The Maddox was designed for one-handed use and works very well for that purpose. It's like a mini-Ulu design with a vertical handle.

I have a brother-in-law who has very limited use of one arm/hand and has the same trouble you describe cutting his food. The Maddox solved the problem, easily cutting even foods such as steak.

My first thought on reading the original post was that he was going to write that he just bought a Maddox.
 
Very cool! ive been dying to try out a full spyderedge, as i have yet to own one.

Thanks again for all the help. Besides ebay (no listing of this item now), does anyone know where I can find a Maddox? Or even pictures of the sheath?
