NewB...what tools do I need?

I'd like to make a set of kitchen knives. I found a set of blanks I like but I'm not sure what kinds of tools I'd need for cutting/fitting the handles.

I guess that a jigsaw for cutting, some files for the rough shaping and sandpaper for finishing should do the trick.
What are you going to use for the handles?

not sure what material. probably some sort of plastic/resin (not sure of the different material types yet). Seems like that would be the most durable.

Like micarta? The many layers of fabric make it super strong and grippy. Plastic resin sounds more like corian, you can pick that up as a sample at a counter top place but it is harder to work with.
