Newbee - how to get the correct angles on a long thin dagger

Hi.
New to the forum.
Have made a couple of fun projects but am now getting more serious.

I have in mind a long (7 inch blade) very thin dagger. In thinking about this, I realize that the angle of the grind would need to change as I get close to the tip in order to leave any decent spine in the blade.

Any advice on how to get this angle right and keep a sharp ridge line down the middle? (Other than a very experienced hand that I probably don't have yet?)
