Newbie Knifemaker ?

A little background first. I live in the country and raise our own meat. When the need to process animals arose I couldn't find a knife I liked to slaughter the animals so I started making my own. My question is I would like to make a knife out of either cpm m4 or cpm 10v but have read heat treat is very important where would I send it to get HT properly and which steel would give me better edge holding for slicing(not trying to start a big debate just want to be able to cut mutiple throats between sharpening)?

so the ones you've made so far, what were they made from? What did you do for heat treat on them? Even the most basic carbon steel will go through quite a bit before needing the edge touched up, if the edge geometry is good and it is properly heat treated.
 
Lots of folks use Peter's heat treat. If its only one blade then you could try Trugrit for a better price.
 
M4 and 10V wouldn't be my choices for a slaughter knife. They are tough and highly wear resistant, but not particularly fine edged.

I would go stainless and use CPM-154, or CPM-S35NV. Tru-Grit or Texas Knifemakers Supply can do the HT. Ask for Rc61 final hardness.

Now, if screaming sharp is what you want, try Hitachi white#2 , Blue #2, or super blue steel (or the Takefu equivalents V-Tok 1 and V-tok 2). They are carbon steel, and are highly respected as the go-to steel for high quality Japanese meat cutting blades.

Aldo Bruno at New jersey Steel baron sells most of the popular cutlery steels and often has Hitachi Blue #2 steel ( but he may be out of Hitachi right now).

Just as a matter of interest, if you cut from rhe inside out, you wiill be guaranteed t omiss bone and have less contact with hide and hair.
