What was the documentary you saw? Is it Jiro dreams of sushi? Please let me know. I would love to see it.
 
Thanks again for all the recommendations.. after doing a bit of research decided to buy the ZT:0801 rexford. Seems nearly flawless and universally loved by its' owners and like the deployment of my CRKT flipper (even though it's a budget knife).

Also really like the Al Mar SERE 2000 but it is too similar to my Mcusta (same steel and long and narrow blade dimensions etc).. The Mcusta was quite a bit cheaper but maybe would have bought the Al Mar instead had I known about it.
