I bought the IB8 to see if I could master freehand sharpening. While I still have a lot to learn the results seem quite good straight from the 320 fine side to my green compound strop.
No fancy steels. Mainly carbon steel and lower end kitchen knives. I have a couple of ZDP189 Spydercos but they are not my main focus.

I want to take things up a level and plan on getting one of the Shapton Pro stones. Would a jump to the 2k be too high coming off the 320 India?
Would the 1500 (actual about 1200 grit) be a better Idea?
 
I think that is too high a jump after a 320 grit stone. I would go to something like 5-600, then on to 800 & 1K. Then on up from there. DM
