Beautiful knife. The abalone is the most beautiful of shells and also quite delicious when prepared properly.:)
I have tried it a couple of times-it's not cheap.
Best was in Ballarat ,Victoria-prepared by the Italian gardener. Superb with fresh garden peas and spaghetti.
The worst was (guess where) just east of where I live where they call it by another name -Paua-and make into fritters at the local chip shop.
Allow me to describe that "experience". Imagine a derelict house where the roof caved in 12 years ago. Nothing has been there but the weather and varmintous rodents.Imagine the carpet that once laid on the floor thick and plush,wooly and warm.Now cut out a slice of that 12 year weather beaten ,mouldy disgusting carpet. Dip it in batter and deep fry. Devour. That's a Paua fritter.Mmmmm and don't forget the rubbery texture of the underlay.
Even with that in mind I still found the strength to purchase this for my eldest sons 21st.Utterly astoundingly beautiful stuff.:thumbup:
