Hey guys I have a NIB ZT 0551 I'd like to trade for a nice Chef knife. This thing is rock solid with no blade play at all. I'm not too particular for what I want but 1)I want to be a chefs knife (not santoku, no some other kitchen utility knife and not some other kind of non-kitchen fixed blade.) and 2) I want to know what the steel is. A lot of them just say 'high carbon steel' but I want to know which 'high carbon steel' or other steel it is. I'd like it 6-8" but prefer closer to 8". I'd prefer new but if it's used it has to be in excellent condition. May be willing to add a little cash and I do have a user Spyderco Stainless Poliwog (no clip or box) I could throw in too.
