Most makers are switching over to 416 or 410 stainless steel for guards, have you considered either of those?
Nickel silver tarnishes over time and needs to be periodically cleaned and polished by the knife owner. Stainless steel doesn't need the same amount of maintenance.
Another new option that has been becoming popular is the use of Silicon Bronze for guard material. It is often used in sculptures and over time it patinas to a rich dark bronze color.
If you insist on Nickel Silver I am sure you can find some if you google nickel silver bar stock. Hope this helps you.
If you are going to use the ns for bolsters make sure you order the pin stock with the same alloy content. If you don't your pins will show in the bolsters. I've seen ns bars that almost resembled a light brass.
