You may be talking about nickel-silver slash german silver. Basically, it's brass with 18% nickel and you can get it here
 
I have seen pure nickel on knives before, but it seems annoying to work with.
 
It is a bit gummy and finding pure nickle in sizes large enough for guards can be difficult. Some have gone as far as smelting their own from powder. 416 SS might be a good choice.
