Sorry for the bad pun. Now-

Here's one of my integral chefs that's been on the shelf a while. It's forged from CruForgeV, a high vanadium carbon steel designed with the bladesmith in mind. Takes a nasty sharp edge with very good retention. Full flat grind with mild convexity toward the edge, distal taper. Euro/German profile.

Handle is mortised construction, all three SS corby bolts are through the hidden tang. Scales are black canvas phenolic with a red fiber spacer.

Hand sanded to 600 grit, mirror polished razor edge.

This blade is ground to achieve food release- i.e., potatoes, onions and the like stick to the blade minimally if at all. As with all my kitchen knives, I did some test cutting with it before posting here. It's extremely sharp and push cuts tomatoes well, dices potatoes with minimal wedging and negligible sticking. However, this knife is not a "laser"- it's a bit more all purpose/robust than that. Use your laser edge knives to slice garlic paper thin, and this one to take apart a chicken and prep your vegetables. I don't believe in a one-blade-fits-all chef knife, but this is my general user type. Feels nice, solid and comfy in the hand. Edge has a continuous mild rocking curve.

Edge before sharpening .020, sharpened at 8 deg./side
Balance point is at the torch in the trademark.

Very nice. You have been turning out some nice chef knives lately. I prefer the gentle curve on this edge but it's a smidgen too big for my use ...and my tiny kitchen. I'm sure someone will snatch this one up quickly though. How would you compare CruForge vs something like 1095? I'm guessing with the extra carbon and vanadium it holds an edge a bit longer?
 
This is an absolutely amazing knife that I have seen first hand. Fit and finish are excellent and knifemakers I have spoken with that work with CruForgeV will tell you that it is a bear to put a satin finish on, as Salem has done. With one maker, the price of a bowie basically doubled for a CruForgeV vs. the 5160 blade.

Photon, CruForge's original name was "1086V" so it's quite a bit like a 10 series steel. It takes an edge as fine as 1095, but a little more aggressive and definitely holds it longer. As noted by Geode, it's a PAIN to hand sand. The fact that it's a large thin blade makes it worse, since some of the steel is ground off after hardening to avoid warpage in the quench. It laughs at anything less than an almost new Blaze belt.

man that is so much better looking than the global and shun knives that so many people i work with have, and im sure it performs better too! I wish the chef business was a little better right now so i could get it!
