Nitro-v stainless steel mini kiridashi.
This Mini kiridashi will make a great desk knife for opening packages or for woodworking projects, the whole blade has a wire brushed finish with a large lanyard hole. The edge is sharpened by hand on water stones to an extremely sharp and thin edge. The Nitro-V stainless steel is easy to resharpen but holds a great edge, in our testing with a chef knife out of this steel we were able to make 2900 cuts on 1/2” rope before the edge was finally dull but was easily stropped back to razor sharp. This piece is just over 4.5” long overall with an 1.75” long cutting edge. Available below for $60 plus $5 for shipping in the US.
