State parks allow you to carry whatever is not deemed illegal by the state. I have been to most TN State parks with my old ka-bar and talked with park rangers and park personnel and never been told otherwise.
As for National Parks I would think they would extend the courtesy of state laws that are applicable to the carrying of knives. But seeing as they just recently passed a law that would allow permit holders to legally carry a handgun in NPs, I do not know.
I would have to say though that as long as the knife you are carrying can be used for hiking, camping, or backpacking purposes they would allow it. In other words just be careful of trying to convince someone that you use your broadsword for batoning wood.
