Wildmike - I keep things pretty simple. I use 5160 mostly, as well as 1084. I've had some good feedback from customers with 5160's edge holding, even though it is a nice, tough steel. One told me, "I processed 3 wild hogs with my knife today and it is just as sharp at completion of work as when it started."
