Nyala scales

Ok. Here it is. Mr. Reeve called me, which was a pleasure BTW. Last year I met him for the first time and I hope to do so again this year. Anyway, I expressed my concerns with blood, fat and everything else related to food prep getting into or under the scales causing growth for bacteria.
Mr. Reeve informed me that there is a gasket under the scale, which will prevent water, goop, gunk or whatever to find its way under there. Also, the newer Nyala's have a heavy wax build up on the scale that would help fill in any voids between the scale and blade. If I understood him correctly there is a wax on the blade too. I think he said metal, which could mean either the blade or hardware.
