This was one of the first knives I made after buying a programmable heat treat kiln. Prior to that I had been using very simple steels like 1084 and heat treating them in a forge. I had always been interested in using in more complex steels, and the O-7 series have always been a favorite. Roman Landes, a German metallurgist and knife maker mentions the performance of O-7 series steels and how they compare with some of the higher alloy particle steels, but without the more complicated heat treatments they require. This knife is made from 1.2519, a tough and wear resistant German O-7 tool steel often used in band saw production. It contains tungsten, which forms carbides similar to vanadium carbide, but not quite as hard. This knife has been in our kitchen for a few years, but I don't use it much any longer. It was made before I bought a grinder, so initially it had thick edge geometry. I took it to the grinder recently and did a lot of thinning, and now the knife's cutting performance has really improved. After thinning out the edge geometry and giving the blade a hand rubbed finish, the edge width prior to sharpening was only 0.005"! The blade also has a nice distal taper, from the handle to the tip. The handle is made from beautiful stabilized walnut burl, back when Alpha Knife supply carried stabilized hardwoods! It also has a hand rubbed finish and oiled and waxed for protection. It makes for a great carving knife. Turkey, brisket, fajitas, whatever!
