Oak on a high end knife??? I say yes.

I Love it Nick, hard to find nice Oak like that and you definitely applied its "highest and best use"!!!
 
Good piece. Using Oak just makes sense. You can see oak furniture that has been around for several hundred years without splitting. I've used some curly oak before that did really well for a handle. Burl is always good.
