I guess a Hukari is a traditional fixed blade.

I recently learned of the existence of these knives, but have not seen one in real life. So I went looking online. The online video clips I found, lead me to believe they have an unusual grind on the bevel. Refer to:

http://www.youtube.com/watch?v=cDOyYFcr08I and see timeframe of 6:10 -- 6:30, and especially 7:15 -- 7:30.
Is this a traditional style of grind? What is the purpose of it?
