You mean, you aren't using the super cool Shun Personal Steak knife?

That knife is super cool. I love mine but when a bunch of people are asking to use the knives I bring I tend to take something I'm not going to be upset if it gets messed up or lost. My wife actually took the little G-10 Hawk to cut up stuff for my daughter. I use the JYD II as a sort of a folding santoku.
 
Have you used a Premier series knife yet?
Not yet, but I was looking at either the 6" utility or the 8" chef's, only about a $13 difference in price for the larger. Do you have any?

That makes sense, the JYD does look like a folding Santoku now that you mention it. I need one of those personal steak knives!
 
I know a couple people who own a few. I dont know what you will do with them but IMO they will be perfect for home use but I wouldn't recommend them for professional use. Great looking and super sharp, I want a set for my home.

Hmm, I was looking for the ones with the light colored wood. I just want them to last. My wife isn't gentle on knives and it's worth it for me to get something that lasts. Do you recommend the Classic versions?
 
My dad uses a premier 7 inch santoku and it's very nice. It's got a very lean grind and very nice fit and finish. The edge was a bit lame out of the box but that's easily fixable.

I highly recommend the classics. Dont get me wrong about the premiers though, they are still awesome knives but you cant beat the classics. Check out the 7 inch Classic Asian chef's knife it is my personal favorite and I have several chef knives. http://www.amazon.com/kitchen-dining/dp/B004M3ZF2O
