Ok need a decent Camp folder?

+1 for a stainless Opinel.
In my experience nothing can beat it in food prep while camping. Just make sure you treat the handle properly before using it (I found lots of good recommendations in the Maintenance section here).

I'd go with a Spyderco Byrd Cara Cara 2 or a Cold Steel Kudu. Both blades work well for food prep, and are easy to clean. They also don't have the potential "Im' using a $100 blade for cutting fish" disincentive to using them.
 
Not sure but I believe you can get an Opinel with a resin handle. Or if you can find them, try either a Marjaq or Durol (both are French made very Opinel-ish). I know you can get either of those in a resin handle material (I have both). I perfer the Durol due to the push button lock - not thrilled about the ring lock, but it works. All of these are excellent slicers.
 
Got an Izula and have used it a handful of times. It is nice but inconvenient to carry. Not long enough for cleaning fish. I hate to say it I feel like it is a novelty. The handle is just not practical.
 
You might want to consider an Ontario RAT 1. It is a very affordable and sturdy knife, takes and holds a decent edge, and the ffg blade makes it an excellent slicer.

Opinel would also be a solid choice, as would the Spyderco Resilience. If you want something a little higher end, you couldn't go too far wrong with a Spyderco Endura 4 ffg, Military or Para-Military. All are top-notch, imo.

Believe me, worth every penny. I use mine at work, and it takes a bunch to get it to rust (thinking of your fish concerns). It is really sturdy, cleans easily (open frame) and sharpens easily as well.

It's a dandy cutter. It isn't the best steel, but it sure works for me on its intended tasks. A couple of licks on the diamond rod, and the blade is back up to snuff.

The RAT 1 would be a good knife at twice the price (ie. buy two! :D ) You may also be interested to know that the spine of the blade is sharp enough to work well with firesteels. An excellent all-round choice for a camp folder. There are now a few different scale colours to choose from as well. I'd avoid the black blades though; the coating is just paint and will wear off quickly--not something I'd be comfortable using for food prep.
 
I know it's not what you had in mind, but I think a Buck 110 would work great. I have yet to have one of the 420HC blades rust on me and they hold a great edge, yet easy to sharpen while caming. If you loose it, you are out $30 or so and can easily be replaced at any Wally World.

I would use a Spyderco Stretch or Endura for this purpose. For the Endura, I'd want VG10 and a flat grind.
 
I just got my Opinel No. 7 carbon in, and except for the horrible factory edge (the curved part was actually not sharpened... at all), I would say it is great, damn near perfect if you factor in the price tag of $12. It sharpened up with just 5 minutes on my Gatco 3 step clamp system. A little stropping took it to razor sharp. I would definitely recommend an Opinel to anybody that wants a good knife. Or anybody who wants a cheap knife.
