Ok, so I have a Benchmade 912 stryker with D2 steel....what will it cut through?

I've done it, it takes a rather large disparity in hardness to do however. I've used my M2 afck to take shavings off a couple cheapo pakistan knives, and a ~50rc tramontina machete, which I believe is 1045 carbon steel. I regularly used an ats34 710 to debur mild steel tubing by shaving off the burr and leaving a small smooth bevel as the built in deburring tool on the pipe cutter sucked. There's really no point in it otherwise, but it can be done.

knife shaving another knife of any quality, is imossible

No it is absolutely not!

It was done by some german knife makers with a blade made from O2 or something at HRC65.

HRC 58 is simply enough to cut unhardened cat food cans and that kind with the propper edge angle (35° included and more). You may loose shaving sharpness but it is not that terrible to get the edge back after two or three cuts (4" cut length).

But any hardened steel edge should not be knocked on another hardened steel edge. No matter how hard either is, damage is great!

To knock the edge onto unhardened steel without damage you will need a convex edge as rounded near to dull for other daily tasks.
