The Old hickory 7" butcher has been a popular knife to modify for outdoors use for a long time ( as butchers have been in the US since the fur trade days ), and now they've decided to release a 5" blade with a leather sheath.
I couldn't find a picture, but it's just called the OLD HICKORY hunting knife.

I just thought it was pretty cool that they're listening , next they can go ahead and just offer the standard 7" butcher with a sheath.
 
I took a 7 in. Old Hickory butcher knife and cut and reshaped it to 5 in. many years ago and I grab it from the block almost every day. It's an incredible slicing machine. I am kind of surprised they never offered a 5 in. model all these years. 1095 blades rule in my kitchen.

I believe they may have at one time, I know they definitely offered a 6".

My most used kitchen knife is an old 6" butcher that I've identified as an AC.CO ca. ealy 1900's.

I bought it as a utilitarian blade to carry on my belt as the previous owner who made the sheath for it had, but it found it's way into the kitchen where it has stayed.
 
I'm sure they don't feel it is necessary on a paring knife but I agree with you. I wish I had bought every Old Hickory I saw in old hardware stores for $2.99 over the years (with a stack of price stickers where they had marked it down over and over for years). The last few I found had so much dust on the package you couldn't read it. Everybody would pass over the Old Hickory stuff because they wanted STAINLESS!

I would have too, a few months back they actually had some old kickory knives at Walmart for really cheap but I didn't pick anything up because they were stainless which ruins the whole point of having them.
It seems everyone wants stainless steel, so much so that you will never find a single carbon steel kitchen knife in a thrift store or Goodwill in my area.
I know it's out there so it makes me think these places throw away all of the carbon steel.

Yeah agree on that, or just do a kephartesque model would be great
 
I'm not sure they're still out there. I used to buy them at estate sales and flea markets all the time, but I don't see them often these days.
These are the last ones I bought. Something like $3 for the set. A year or so ago.

I've never seen a lot of the paring knives, but I don't think I've seen one with a full-length tang ever.

It's a long time that his site has said it's closed due to health issues, and he'll update or reopen if he can. Doesn't sound too good.

It has been quite a while since I visited that site. The last time was maybe a couple of years ago. It contains what looks like a pretty comprehensive listing of Mora knives, including quite a few that didn’t exist when I used to prowl the site soaking up information on Scandinavian knives.

Cool site, a throwback to the early days of the internet, almost prehistory from where we sit now.
 
The 6 incher was my favorite. I’ve modded a number of them, too bad it was discontinued. The new 5-1/2 is a welcome addition.

Ragnar’s site has been on hold for a while now, I hope he makes it through whatever’s going on. It was always a pleasure to deal with him, in my experience.

I'm deeply saddened to report that Ragnar has passed on, hopefully to Valhalla.
 
They're hard to find in thrift stores and in small town old hardware stores because they're the best insulation cutting tool known in the trade. Most insulators I have known keep a whole dozen in their tool bucket, and they'll wear out 9 of them per year, easy. Those fellas sharpen them down to needles before they toss em. Glass fiber is rough, but carbon steel sharpens easy enough.

I'm very sorry to hear that. Not only did he sell Scandinavian knives, he was extremely knowledgeable about them.
