Which is better? Old Hickory or Dexter Russell knives?
Which one which is thicker and holds an edge better. I assume the thicker one is stiffer one and stronger and more what I was looking for.

Assuming the carbon steel blades, some Russell patters are nicer. Neither makes are very thick. I think the skinning blades are thickest, but pretty tame compared to todays tactical wonders, topping out at about 1/8". The ones I've handled from both companies seem to be run at moderate hardness.

Thickness and edge holding are opposed to each other for edge retention in general cutting. Thinner cuts better and longer.

Thickness varies with models but generally I find the Dexter Russel knives are better finished and hold an edge longer.

I'm kind of reluctant to post this because of all the love Old Hickory gets around here but, here goes.

I think they're junk.

At least the two I have are. To call them knives is an act of charity. In the condition they arrived, they were incapable of cutting anything, and the unfinished handles were unusable.

The best thing I can say about them is, I got a lot of practice sharpening.
