Old Hickory

My mother has always had an OH butcher knife in the kitchen, and after decades I decided to replace it with new one. Boy, they didn't even look like the same knife so much steel had been removed from the old one over the years. And I remember of lovingly putting in the time to get that new butcher sharp as a razor... and it took an eternity lol to get there.

Beautiful knives that have a strong significance to me, but it's a right of passage to put the edge on one. Yours looks well thinned out and should cut amazing. Enjoy it.
 
I think I know why it was so difficult to get it sharp. When I looked closely at the spine I can see that it's more crooked than the letter s. Of course it's gonna be a pain in the ass to get an even grind on it.
