you could draw what you want and have great lakes waterjet blank it for you, then you just grind your bevels, and have someone ht it.

Are you in the Netherlands? Shipping must be a bear. There are
some europeans on the forum from time to time maybe they can
point you in a more local direction
 
Another option is to visit a site such as Macys.com and buy a set of steak knives and take off the factory scales. I do that when I do a kitchen knife set. I use their Viking knives.
