It's an air hardening steel , A2, But for a guess I would think they temper back the handle probably by dipping the handle in molten salt after they temper the whole thing.
Nice guess Mete... But you're wrong. The whole knife including the handle is at the same hardness. Nothing is drawn back. I visited the shop several months ago and they had a batch of the one piece knives come in while I was there. I asked and the process was explained to me. I even watched as they tested a sampling of the knives on the in-house Rockwell tester.
