One sharpener

today i totally dulled the fine edge on my izula, cutting some saussage, that had some kind of steel in his protective plastic/whatever layer, i guess the stuff they put to protect from stealing...anyway, i ran the edge across the hidden piece of metal, and it was gone, all the edge was shining in the light...
a few passes on a small sharpening steel , found in victorinox zermath sheats,a few passes on the sharpmaker white stones at 40 degrees, and ... in about 5 minutes, back to razor sharpness :D:D

Those little sharpening steels from Victorinox (actually from Sheffield, I think) are surprisingly handy & effective for quick touch-ups. Kinda' cool looking too. I sometimes wish they made a version that was slightly larger, as they're a bit on the tiny side.

I have a GATCO and a KME.

The GATCO is a great buy.

I have sharpened everything from a Leatherman Juice S2 up to a 10" chef knife with no problems.

I started with the GATCO Profesional. I have added the extra coarse, extra fine, and ultimate finishing hones. I also added a very inexpensive strop and polishing step. If you buy the kit from the right retailer you get the stand for free.

The GATCO is easy to use, inexpensive, and produces a very nice, even edge.

Good luck with whatever system you end up with.
