I'm torn between either one of the many 1000k grits whetstones, perhaps with a rougher dual side, or the Fallkniven Diamond Ceramic Whetstone DC521. And then perhaps some sort of strop+compound as a finisher.

Man this isn't easy now is it 😂
 
Different strokes for different folks which is fine but if I were you I’d spend the extra little bit of money if it’s feasible and get the shapton pro or Naniwa pro instead of double sided. Just my 2 cents. But either way good luck on your trip down the rabbit hole!!

As there are so many good stones it is never easy :)

You would not do wrong with one of the 1k grit Japanese whetstones from any of the tier one brands.
Or the DC521. I used my DC521 for a touch up of two of my VG-10 kitchen knives a moment ago. Both are razor sharp. Just the ceramic side. No strop.
