Hi everyone!
Today I am offering a chef knife with a flat grind coming to a slight convex at the edge for excellent cutting and durability.
This knife is made from 3/32” Nitro-V stainless. Knife is 11 1/4” long with a 6 1/2” blade. Blade was heat treated and tempered in a digitally controlled Evenheat knife kiln. The blade was aluminum plate and air quenched. Approximate hardness is 61-62.
The scales are navy blue dyed giraffe bone (naturally sourced) and American Walnut held on by epoxy and nickel pins. It is difficult to see in the pictures but the handle is gently shaped into an octagon to mimic a wa handle. Spine and finger choil have been rounded for user comfort.
This knife will do it all - vegetable / poultry / fish / meat.
