Ontario knife co Old Hickory 12” chef knife

Old Hickory chef knives are still around. I bought one for a friend of my wife - she loves it. I got her the 8 inch model. Few folks need a 12 inch chef knife. I see an 11 inch butcher (I have one, but seldom use it).
I use an 8” that I bought new a few years ago. It’s a great knife. I use it almost every day.
 
There are lots on the Bay...
I’ve only seen one other 12” chef in old hickory but nothing else identifying it such as the Ontario brand. But that was it. I’ve seen a lot of old hickory knives but haven’t seen another like my Ontario 12” chef just made me wonder if they weren’t in demand

I was born and raised in Alabama where the Old Hickory/Ontario knives are ubiquitous. Every fish camp had an assortment as did most home kitchens. When the kids saw the giant 12” Old Hickory come out, we knew Dad was about to slice up the watermellon that had been chilling in the cold creek all day!! 😃
 
I bought an 8" about 6 years ago from someone who had about 40 of them in stock. My daughter has since absconded with it but now I know why it needs to be sharpened so often. 1075. I knew it wasn't up to the quality of years ago's carbon steel. I can't say I've ever seen a 12" either. 12" does make a great watermelon knife. I use an old Foster 12" Simitar and I gave my daughter a nib Robinson 12" Butcher knife to use.

Here’s a set I bought just a year or so ago, the butcher knife is probably my most often used out of this set. Patina is easy to control, and some folks enjoy it anyway. A lot of history with this brand, American, since 1889; simple and inexpensive.

Have you pulled a tape measure against that knife, I can’t help but wonder if it’s a 10” tip to heel.

I thought I had a decent set, but if it’s a true 12” I’ll definitely be doing some more digging.
Here’s what I have, that I’ve rehandled:

Here are the first 3 I started with I added a little material to the handle of my 10” to get a full tang and move the balance a bit further rearward.

Yes it is definitely a 12” it’s the only one I’ve managed to find that is an Ontario. I found just one other that was a 12” but was only labeled old hickory on the handle

That sucks. But I kinda had a sense it was coming. All good old brands are being destroyed. It's amazing they made it this long.

I have added 4 OH knives to my set in the past few years and I just ordered a couple more while they are still available.

Maybe we'll get lucky and Blue Ridge will keep making great plain high carbon steel knives like these. But I bet the price goes way up.
 
I grabbed a couple OKC knives while they're still in stock. I got the boning knife and the big 14" butcher knife. The butcher knife is impressive. It's like a small machete.
