Fish Sauce? Yes, fish sauce. A staple of almost all Asian cooking.
Where to get it? The international section of most supermarkets or any asian grocery store.
Best brand? Tiparos
Is it yucky? By itself, yes it tastes fishy and salty. But mixed in with other ingredients, it's great.
Does it keep? Yes, just about forever. It has a very high salt content. This fact alone allows it to sit unrefrigerated indefinitely. Most bacteria die in high salinity conditions. Only a few (halophiles/ salt tolerant) bacteria live in high salinity. That's why in the old days, things were salted in order to preserve them.
