Will mineral oil have adverse effects on the pivot area? What can I apply that will offer rust protection at the joint, and protect the wood at the same time. I read hot wax will work, any comments on this?

Mineral oil should do the trick. It is sold in home stores as protectant for wood cutting boards. It is foodsafe and will not go rancid unlike vegetable or animal based oils.
