Whats the blade steel for the Opinel no.8 carbon and stainless

They make stainless ones too, don't know what the steel is though.

PG's link has the names. As for the rest, here you go - French XC90 (AFNOR) steel composition and Sandvik 12C27Mod steel compsotion.

XC90 is AISI 1086 steel equivalent.
