Opinel Question

hahaha wow. definitely stick with the carbon steel. I hate cheap stainless, won't take or keep a very good edge.

If Sandvik Materials Technology makes any cheap stainless that does not hold a edge, it will be big news to many in heavy industry. Sandvik 12c27 is a very clean stainless steel developed for the cutlery industry. It has an excellent reputation, and the vast bulk of the blades produced my Mora of Mora Sweden are made of it.

Before you so quickly pass judgment, you should try one.

In my small personal experience with Opinel's, I have found that I do prefer their stainless steel.
As for dismissing 12c27 as cheap or bad quality steel, everyone has a respectable opinion, but I'd be curious to know if this opinion comes out of use or prejudice. Stainless Opinel's also allow for a wider choice of handle materials, which I find very nice.
Th one thing I don't really love on my stainless Opinel is the blade finish. It looks a bit too shiny and doesn't fit the knife that much in my opinion.
I will try to follow Kevin's path and make it less shiny. It won't get a patina though.
