I don't think the grit is important. If you are using the same steel dimension and sharpening at the same angles you are going to get a micro-edge that is different with each type of steel but I think you might need a high magnification instrument to see the difference.
What will be different is the amount of time or the number of sharpening strokes necessary with each type of steel at a specific grit to get the "burr". This will depend on the steel.
