Josh,

Found something for you that might help.

Stock Removal

Now, although he is using damascus and a belt grinder, the principle is the same.

Cut out (vs. weld) a tang
Mark your grind line on the blade
Set the tool rest at 45 degrees
Grind to within 1/8" of blade middle
Set the tool rest to 60 degrees
Grind more
...and so on.

Be careful to leave a fat enough cutting edge so that it stay blunt until the final passes. I think you know what I mean.
