Alright...you can't just drop 3V cheese knives without some explanation...
I got some strips of very thin 3V, 0.048" thick, so I made some cheese and paring knives designed to cut with little friction. The serrations and the cutouts combine to do the trick.

Yeah, I have a thin and narrow steak knife that cuts cheese very easily, but not straight, so I made these to keep what works, but stay straight.
I had one of their lev-r-lok knives in the late 90's. Tanto of course. I love unique mechanism's like that.
