Newly made Nakiri.
This one is all about the steel and the grind.
It is A2 at 62 HRC which you might not think of for a kitchen knife, but it takes a great edge. A paring knife in A2 that I made in 2005 is still my favorite.
It patinas, but then is stable.
This one is ground to 0.005" before sharpening to 1500 at 13dps on a Wicked Edge.
