My tip is this: I didn't have a knife rack fonthe inside of the oven. I cut a piece if angle iron to the width of the inner chamber. Then I cut slots in it to hold the blades up.
cant remember any more but i think you are to give it a "burn in" once before doing HT also if you can help it let the door closed after HT and let it cool slowly the brick and ellemants with thank you (i have had mine over 10 years and just now replaced the temp probe) i have a back up coil but have never needed it
