Oven Tempering Muffle

Knowing how much the oven temperature fluctuates, I thought I'd try something to help level out the ups and downs.

I'm using an air cushioned cookie sheet and a cake pan on top of that. Put the knives in the cake pan and cover with a sheet of aluminum foil.

I figured if a muffle is good enough for the forge, it is good enough for the oven.

Good idea! Have you monitored the temperature inside the oven vs inside the muffle?

Not yet, I was just thinking about how I was going to do that and I just remembered that I bought two 12" thermocouples and they work with my multimeters...

Going to do that right now before the cycle is up and my chicken is cooked. :)
 
It definitely works.

Here are the temperatures I compiled over to complete cycles:

The interesting thing that I noticed is that the knives were in the oven for an hour before starting the test and it still took 3 heat cycles before the TC inside the pan muffle reached its highest temperature.

So at least a 2 hour cycle is required since it takes at least an hour just to get up to temp then an hour at temp.

BTW, the oven was set at 375 and it gives 400° inside the muffle.

Thanks, Mike, that graph really shows the fluctuation without the muffle.

I the first cycle I didn't really take temps at any specific interval or time, the second heat cycle I took temps more-or-less at every 10°C drop of oven temperature.
