over-engineered or otherwise intriguing mechanics

Have a really cool blade that locks open but I can't figure out how to close it. Someone once said it was a fixed blade but I don't remember ever breaking it.

The Benchmade 7505-132 Sibert Dual Action is a cool mechanism and a cool knife in general if you're not familiar with it. Either manually deployed by the thumb stud or automatically deployed with a bolster release.
 
When I think about threads on this topic, some of the older Kershaws come to mind. I have a Ripcord (somewhere) that used a special belt holster that stored the knife by retracting it into the grip. When you pulled the knife handle out of the holster, a stud slid in a channel causing the blade to slide out the front. Think of it as a very slow and overly complicated single action OTF...that doesn't actually spring.

The other is their knife called the E.T. It was a pretty convoluted fidget toy that was kinda cool to play with until it bit you.

Both of those are long discontinued, but there were from back in the day when Kershaw was innovative but also a good value and largely domestic.
