Thanks for all of the helpful replies. Since I'm a knife accumutor, not a knife user, the issue of sharpening rarely comes up. :)

If you don't mind spending the cash, I say get an Edge Pro.

I use my Edge Pro to establish the edge or reprofile, and a Sharpmaker for quick touchups.
