Oyster Knife Hardness

Knowing that an oyster knife is built for prying open rocks more or less, what is your opinion on a Rc hardness number that will correlate to a good toughness? I will be using 440C mostly, but maybe one or two from 1095 or O1.
 
I've always hardened mine just like most of my knives RC 59-60
You will be doing your customer a disservice to make them out of regular carbon steel.
440-C would be great here in the lowcountry.
 
It seems to me that spring temper would be ideal if these aren't going to be sharpened. It should give the maximum amount of flex without breaking or taking a set.
