Oyster knife

I have a request for an oyster knife made out of CPM154. I am kinda wondering what hardness to give this sort of knife. Never made one of these. Thanks for any opinions.
 
Honestly, and this is only my opinion... why do they want CPM154? oyster knives aren't meant to be amazing edge holders.. i would say something more stain resistent would be better for this application. sorry i don't have an answer other than that.
 
I make some out of 440c. It's stain resistant and cheap. HT like normal. Mine are 58 or so.

that's exactly what I am making mine out of... I just wasn't going to say it. 440c seems idea for this unless you can get H1.

for god sakes post a few pics when you're done... I'll do the same.
 
Sure does... i started out using it as my first stainless and used it for years. Love the stuff. holds a decent edge and is really stain resistent. yes, there are better edge holders and i was worried it wasn't tough enough so i did some testing on a few of my blades, and with proper geometry and HT, it will take some serious abuse. I think the main complaint with people is that it's just not new and sexy, combined with 440c being confused with other "lesser" steels.

Couldn't agree more. It makes a great oyster knife. It also polishes very nice.
 
I have used a lot of CPM-154 and it works fine. I also use 440-C and AEB-L. I go around Rc 56-58.
