These are both ridiculous slicing machines with THIN edges. They both cut like a laser.
Specs:
Both double cryo'ed and triple tempered to a tested 62 hrc.
Stabilized Buckeye Burl over black and grey G10 with carbon fiber pins.
Satin 400 grit hand finish.
Paring knife is full tang 1/16" AEB-L, and is 7.2" tip to butt with 3.1" of usable cutting edge. Ground to a very thin tip for all the fine work that parers are good for.
Petty is .09" AEB-L with a tang that's been tapered down to .035" leaving the neutral balance point at the front finger. 8.3" over all length with 4" usable cutting edge.
