A thin and very sharp kitchen tool
52100 high carbon steel
Heat treated to Rc 58-60 with attention to a fine grain structure throughout the blade. Proper heat treating is especially necessary in a thin blade like this one.
Flat to slight convex grind
Professionally stabilized figured and spalted maple handle. Dishwater safe but please never in the dishwasher.
Overall length: 8 inches
