I buy my steel in 4 foot length and sometimes I get to the end of the bar with a piece left over that is too small for a hunting knife. This knife is from a bar of 1/8 inch thick stock and I think it is just the right size for a kitchen knife.
52100 high carbon steel
Heat treated to RC 58-60 with attention to a fine grain structure throughout the blade
Flat grind with a slight convex
Stabilized maple handle which is dishwater safe and like any knife, please never in the dishwasher
Overall length: 7 inches
Blade: 3 1/4 inches
