Paring Knifes

Victorinox paring knives are great and inexpensive, I bought a couple for kitchen use and ended up getting a few more for my toolbox as well.

If you prefer wood handles, check out Opinel paring knives. They are very affordable, you get two in each box. I love them.

I also think that Victorinox kitchen knives are AWSOME ! I purchased my wife the paring knife & it's great !:thumbup:
 
The Shun paring knives are amazing, the Bird's Beak is my choice. Japanese brands don't really have a paring knife so to speak, just a "petty" which is a bit larger.
The right Japanese brands are also top notch, my Hattori santoku is not only a work or art, it's a monster in the kitchen!
Whatever you do, make sure you:
hand wash and towel dry them.
use a wood or plastic type cutting board.
only touch up the edges as necessary with a good steel.
 
I have a carbon steel Sabatier that is awesome. I mostly use the victorinox $5 ones. The are beaters and work great.
